Umami Burger Glaze

Glaze before you graze! This tangy, barbecue-inspired burger glaze is a great way to add flavor and tenderness to your burgers before they hit the grill.

Ingredients

For the mustard glaze:
  • ½ cup Plochman’s Carolina BBQ Mustard
  • 1 Tbsp Worcestershire sauce
  • 1 Tbsp honey
  • 1 tsp fish sauce
For the burgers:
  • 4 ¼-pound burger patties
  • Kosher salt, to taste
  • 4 slices smoked Gouda cheese
  • 3 Tbsp mayonnaise
  • 4 brioche buns, cut in half
Optional toppings:
  • Thinly sliced red onion
  • Butter leaf lettuce
  • Dill pickle chips

Directions

  1. To make the mustard glaze: In a small bowl, whisk together the mustard, Worcestershire sauce, honey, and fish sauce until smooth. Cover and keep refrigerated until ready to use.
  2. To make the burgers: heat a grill or grill pan over medium heat. Season the burger patties on both sides with salt. Grill burgers until sear marks appear on one side, about 4 minutes. Flip the burgers and brush with some of the mustard glaze. After marks appear on the second side, flip the burgers again and brush with more glaze. Continue this process, flipping every 1 to 2 minutes, until the burgers are caramelized and cooked to the desired level of doneness, about 8 to 10 minutes total. Transfer the burgers to a wire rack or cutting board to rest and place one slice of cheese on each. Allow to melt, about 5 minutes.
  3. Stir the mayo into the remaining mustard glaze until smooth, to make a burger sauce. Set aside.
  4. Spread the sauce onto both sides of the brioche buns and assemble the burger with the optional toppings as desired.
Kick It Up a Notch: If you want a little extra heat, swap the Carolina BBQ Mustard for Chicago Fire or The Works.
