Carolina BBQ Brisket Egg Rolls

These beefy, creamy, smoky masterpieces are a show-stopping appetizer, side, or even main dish (yes, they’re that hearty). Featuring tender brisket, cheese, and Plochman’s Carolina BBQ Mustard, this recipe gives you the barbecue experience in a tidy egg roll package.

Ingredients

  • 2 quarts vegetable oil, plus 2 Tbsp
  • ½ cup small-diced yellow onions
  • ½ cup grated carrots
  • 2 cups thinly sliced green cabbage
  • 2 cups sliced cooked brisket
  • ½ cup Plochman’s Carolina BBQ Mustard, divided
  • 12 oz cream cheese, room temperature
  • 1 cup shredded pepper jack cheese
  • 16 egg roll wrappers

Directions

  1. In a medium skillet over high heat, combine the oil, onions, carrots, and cabbage and saute until the cabbage is tender and golden in color, 8 to 10 minutes. Stir in the sliced brisket and ¼ cup of the Plochman’s Carolina BBQ Mustard. Set aside. 
  2. In a medium bowl, stir together the cream cheese, pepper jack, and remaining ¼ cup of Plochman’s Carolina BBQ Mustard. Set aside.
  3. Place 1 egg roll wrapper like a diamond on a flat surface. Dip your fingers into a bowl of water, then run them across the edges of the wrapper to wet the edges. Place a second wrapper next to the first one, so their inner corners overlap by 2 to 3 inches, to create a base for the filling, and wet the edges of the second wrapper. Add ⅓ cup of the cream cheese filling and ⅓ cup of the brisket filling side by side in the middle across the width of the wrappers to form a 4 to 5 inch log. Pull the bottom points over the filling and fold the two sides in, moistening edges with water as you go; roll tightly. Repeat until all 8 egg rolls are rolled. 
  4. Add the vegetable oil to a Dutch oven fitted with a deep-fry/candy thermometer. Heat over medium-high heat until the oil reaches 350ºF. Adjust the heat as needed to maintain this oil temperature throughout the frying process.
  5. Using a wire skimmer, gently lower 2 egg rolls into the hot oil. Fry for 3 to 4 minutes, flipping the egg rolls halfway through until each side is a deep golden brown. Repeat for remaining egg rolls.
  6. Transfer the egg rolls to a wire rack. Serve warm with more Plochman’s Carolina BBQ Mustard for dipping.
