Cheddar & Onion Waffle

If you think waffles need to be sweet, think again. This savory recipe flips the script with shredded cheddar, thinly sliced onions, and a hint of Plochman’s Stone Ground Mustard for just the right amount of tang. Top them with crispy fried chicken, a drizzle of hot honey, and a sprinkle of green onions, and you’ve got a next-level brunch situation.

Ingredients

  • 1 ⅔ cups all purpose flour
  • 2 Tbsp granulated sugar
  • 1 tsp kosher salt
  • ½ tsp baking soda
  • ½ tsp baking powder
  • 1 ¾ cups whole fat buttermilk
  • 3 Tbsp unsalted butter, melted
  • 2 large egg whites
  • 2 Tbsp Plochman’s Stone Ground Mustard
  • 1 small white onion, thinly sliced
  • 1 ½ cups shredded sharp cheddar cheese
  • Fried chicken tenders, for serving (optional)
  • Hot honey, for garnish
  • Thinly sliced green onions, for garnish

Directions

  1. Heat a 7” Belgian waffle iron over medium heat. 
  2. In a large bowl, whisk together the flour, sugar, salt, baking soda, baking powder, buttermilk, butter, and egg whites until smooth. Fold in the mustard, onion and cheese. 
  3. Add 2 cups of batter to the waffle iron. Close the lid and cook until the waffle is golden brown and cooked through, 8 to 10 minutes. Repeat with the remaining batter. 
  4. If desired, top the waffles with fried chicken tenders and garnish with hot honey and green onions.  
Kick it up a notch: Still in the mood for sweet? Make it a sweet mustard waffle! Add 2 more tablespoons of sugar to the batter, substitute Plochman’s Cranberry Mustard for the Stone Ground Mustard and omit the onion and cheese. Top with whipped cream and cranberry jam.
