Citrus Mustard Arctic Char

Ingredients

  • 4 small oranges
  • 1 lemon
  • 1 tablespoon honey
  • 4 tablespoons olive oil, divided
  • 4 four-ounce arctic char fillets
  • ½ tablespoon Plochman’s® Mild Yellow Mustard
  • 3 tablespoons minced chives
  • Salt

Directions

  1. Position an oven rack approximately three inches from the broiler, and preheat the broiler on high.
  2. Remove the skin from each orange and the lemon by slicing the ends off of each fruit, then slicing the skin off of each side. Squeeze any juice from the skins into a medium bowl, then discard the skins.
  3. Remove each citrus segment from the membrane, adding the segments to the bowl. Squeeze any juice from the membrane into the bowl, then discard the membrane.
  4. In a large bowl, add one tablespoon of the citrus juice, honey, and one tablespoon of olive oil, stirring to combine. Add arctic char fillets to the bowl and marinate for at least five minutes.
  5. Meanwhile, stir in two tablespoons of olive oil, mustard, chives, and a pinch of salt into the medium bowl containing citrus segments to create the citrus mustard sauce.
  6. Lightly coat a sheet pan with the remaining one tablespoon of olive oil. Place marinated fillets on pan, skin side down. 
  7. Place pan in the oven and broil for 4-5 minutes. 
  8. Remove pan from oven and transfer fillets to serving dishes. Spoon citrus mustard sauce over fillets, garnish with chives and serve immediately. Extra sauce can be served on the side.
