Game Day Snack Board

Turn your tailgate into a tail-great with this Game Day Snack Board! Complete with a homemade cheese football, a variety of mustards, and all your favorite snacks, this spread has something for everyone. Your guests will keep snacking, and you can keep yelling at the TV…what could be better?

Ingredients

For the cheese football: 
  • 1 lb cream cheese, softened
  • 2 cups grated sharp cheddar cheese
  • ¼ cup fresh parsley, finely chopped
  • 2 green onions, finely chopped
  • 2 teaspoons Plochman’s Jalapeño Mustard, plus more for decorating
  • 1 teaspoon Worcestershire sauce
  • 1 teaspoon red pepper hot sauce
  • ½ teaspoon garlic powder
  • ¼ teaspoon freshly ground black pepper
  • ⅔ cup finely chopped pecans
  For the snack board:
  • 1 cheese football
  • 1 recipe Plochman’s Sweet & Savory Glazed Cocktail Sausages
  • 1 recipe Plochman’s Savory Roasted Trail Mix
  • ½ cup Plochman’s Harvest Honey Mustard
  • ½ cup Plochman’s Jalapeño Mustard
  • 1 cup raincoast crisps fig and olive crackers
  • 1 cup soft pretzel bread bites
  • 1 cup pretzel crisps
  • 1 red bell pepper, medium sliced
  • 1 green bell pepper, medium sliced
  • ½ cup green olives
  • ½ cup pickled cornichons and onions

Directions

  1. To make the cheese football: In a food processor, combine the cream cheese, cheddar, parsley, green onion, Plochman’s Jalapeño Mustard, Worcestershire sauce, hot sauce, garlic powder, and black pepper; blend until well incorporated and the cheddar and onions are slightly broken down. 
  2. Place an 18-inch-long piece of plastic wrap on a clean surface. Transfer the cheese filling to the center of the plastic and fold the wrap over the cheese to encase it. Using your hands, gently shape the cheese into a football shape. 
  3. Refrigerate for 30 minutes or up to overnight.
  4. Spread the chopped pecans on a small sheet pan or medium rimmed plate. Unwrap the cheese football and place it on top of the pecans. Gently spread and press the pecans all over the football to cover completely. 
  5. To make the snack board: Place the cheese football toward the center of a serving platter and squeeze extra jalapeño mustard on top to create laces on the football. Arrange the cocktail sausages, trail mix, and small bowls of Plochman’s Harvest Honey and Jalapeño Mustard on the platter. Fill the remaining open spaces with crackers, pretzel bites and crisps, sliced bell pepper, olives, and cornichons and onions. 
Kick It Up a Notch: Add your favorite spicy pickles, hot cheese, flavored pretzels, and spicier pepper varieties to kick up the heat on this board. This recipe is customizable to your taste, so go spice-crazy if that’s your jam!
