Horseradish Reuben Sliders

Crispy toast, melty Swiss, and savory corned beef come together with a bold twist on classic Thousand Island Dressing. We amped up the sauce with Plochman’s horseradish mustard, adding just the right amount of heat to balance the dressing’s sweet tanginess. Whether you stick with corned beef for a traditional Reuben or swap in turkey for a Rachel, this sandwich delivers all the rich, toasty goodness you crave.

Ingredients

For the Thousand Island Dressing: For the Reuben sandwiches:
  • 4 slices rye bread
  • 1 cup Thousand island dressing
  • 1 cup sauerkraut, drained
  • ¼ lb thinly sliced corned beef, divided
  • 4 slices Swiss cheese, divided
  • 2 Tbsp unsalted butter

Directions

  1. To make the dressing: In a mixing bowl, combine the mustard, mayonnaise, relish, ketchup, paprika, Worcestershire sauce, and salt. Stir until well combined. Set aside.
  2. To make the sandwiches: Heat a cast iron skillet over low heat. 
  3. Spread an even amount of the Thousand Island dressing on one side of each bread slice. Divide the sauerkraut evenly between two bread slices. Top each with the corned beef and 2 slices of cheese. Top with the other slices  of bread.
  4. Melt the butter in the skillet. Toast the sandwiches in the butter on both sides, until golden brown and the cheese is melted, about 4 minutes per side. Transfer the sandwiches to a cutting board. 
  5. Insert four toothpicks into each sandwich, and slice each into four square sliders. Transfer to a serving platter. Enjoy! 
Kick it up a notch: Double the amount of mustard for extra sauce…and extra spice!
